Low Carbohydrate Breakfast Bake

Breakfast Bake

Ingredients-

·        16 ounces of breakfast sausage

·        1 onion

·        2 bell pepper (I find the red, yellow or orange taste better than the green in this recipe.)

·        8 eggs

·        2 tablespoons heavy cream

·        1 teaspoon dried basil

·        1 teaspoon dried thyme

·        1 teaspoon…

·        Salt to taste

·        Pepper to taste

Optional ingredients-

·        Mushrooms

·        Spinach

·        Cheese (Cheddar and parmesan are good choices but any work)

·        Any vegetable that is about to go bad in the fridge. This is a good way to repurpose them.

Optional toppings:

·        Sour cream

·        Salsa

·        Guacamole

Brown sausage while chopping onion, peppers and mushrooms. Once sausage is browned add onions and other vegetables. Once cooked down and juices are released, drain and set aside for a bit. The more juice that drains off the better the consistency of the end product. While draining, whisk eggs, heavy cream and seasonings together. Line an 8x8 or 9x9 pan with parchment paper. Put sausage and vegetables in the pan then top with egg mixture. Bake at 385 for 25-35 minutes. Play around with the length of time you bake. Shorter time for a softer texture or longer for a firmer texture. Sprinkle the cheese on the last 5 minutes of baking. Top with suggested toppings or eat plain. Makes 8 servings.
